On Monday, our Fitness Center had a Member Appreciation Day with lots of fun activities (including a rock wall), free food, and tons of giveaways. We had a great time, and even gave our regular Bootcamp class the gift of watching us (the instructors) workout – while they take a break – through the agility course we put them through. I’m kind of amazed at how much they got into it, and we just died laughing at the phrases our class yelled at us that they apparently get to hear from our mouths every day. A taste of our own medicine?

At the end of the evening I helped clean up, and there was a whole box of apples and bananas left over, which our director begged us to take home. I try not to eat a whole lot of bananas just because they’re so high calorie (did you know one banana contains well over 100 calories??? What??). So those bananas have been sitting for a while, waiting to be turned into something amazing.

What do you do with a bundle of bananas when you are trying to eat healthy (banana bread and other banana desserts out of the picture)? Well, you make these amazing banana protein cookies! These are completely accredited to my fabulous friend, Caroline. They are SO easy, and delicious! Great pre or post-workout snack.

Ingredients:
2 Bananas
2 Scoops of Gluten Free Vanilla Protein
1.5 Cups Gluten Free Oats

Mix ingredients together and bake on 350 for 15-18 mins. That’s. It.

I doubled the recipe and made 2 batches because as I told you, I had (and still have) a lot of bananas. My doubled batch came out to 14 cookies. 1 cookie equates to about half a (lean) protein bar.

Here’s the breakdown:
Calories: 125.7
Protein: 5.5 grams

The Larabar – ALT protein bar is about 210-240 calories (depending on the flavor) with 10g of protein. And Larabar is about as natural as you’re gonna get in a protein bar. So this cookie is very comparable!

If you give it a try, let me know what you think! I also think you could add some honey drizzled over the top, or even some cinnamon. I kept it pretty simple because it doesn’t really NEED any extra sugar, and the Lord knows I sure don’t either. :)

humble beginnings

Well, this post is a little late, but things have been a bit crazy around here. I, along with many of you, have been trying to kick this allergy attack for almost 2 weeks now. Isn’t it kind of frustrating how much allergies affect a person? I mean, if feels like it shouldn’t be a valid sickness, cuz it’s just allergies! But for real, I have had countless headaches, tiredness, and even loss of appetite and stomach pain due to these stupid allergies! Not to mention trouble breathing and hearing. Minor issues. :)

Anyway. This past weekend Ryan and I went on our second outing drawn from the Jar O’ Dates, and the clue was “Humble Beginnings”. Ryan recreated our first date, which was super fun to walk down memory lane together. Can you believe it’s been 4 years since that first date? For real. Actually, 4 years ago TOMORROW. Say what? Kinda fun how that worked out.

Our first stop was to Main Street Theater. On our first date, we saw Willy Wonka, and this time we saw James and the Giant Peach. A little fact about me: I love plays, and I usually am more interested in plays that are adapted from children’s stories. If you’ve never read the books or watched the movies, both of these stories are kind of strange, but brilliant nonetheless. Both really great!

After the play, we went to Sambuca and hung out there for a long while. They have a live band every weekend, which is super fun. On our first date they had a jazz band; this time was classic rock.

Ok, so I know you all are now wondering if we repeated our first date bet and if Ryan jumped into a lake again. I’m sorry to tell you that it didn’t happen, but our excuse is that the lake he jumped into the first time is no longer there, and there’s now an apartment complex in its place. Haha. Sorry, we apparently got more lame over the past 4 years. We opted to go eat ice cream at Amy’s Ice Creams. Even though I know you may be disappointed, I really feel like it was a better choice (also, if Ryan would have jumped into a lake again, this time he’d be coming home with me, all slimy and nasty… last time that was not the case). :)

This weekend was so fun, and also full of gatherings with some crazy fun friends. This coming weekend we get to celebrate my sis-in-law’s birthday (which is tomorrow), and also Ryan’s aunt’s birthday! Kristin sadly is super sick right now, but we are hoping she gets better by Friday so we can party it up! To your health, sis. ;)

NYC take two

Last Wednesday I jumped on a plane with 21 other people from our church and headed to New York City! This was our 2nd mission trip to NYC as part of Mission 1:8, and it was a very full 4 days! The first time we went this past Fall, we were there for 8 days with a team half the size of this past one, and served alongside 4 different churches that our church is supporting. This time, we focused on one of those churches in particular who just launched their first official service this past Sunday, on Easter! It was a great time, and our team was so fun! Here’s a brief overview of what we got to be a part of while in NYC (I took a ridiculous amount of photos that can all be viewed here if you’re interested):

Helping a church launch it’s first service means you have to let people know that the church is there. So, the morning of each day we headed to Brooklyn and passed out flyers to give everyone a heads up! So many of our team members got into some pretty cool conversations. It’s interesting because Easter Sunday fell on April 20 this year. On the flyer, it had the date 4/20 really big across the back. 4/20 also means something else (I’ll let you figure that out). Needless to say, we had some interest, and in turn, conversations with people who probably wouldn’t otherwise take the time to talk to us. God is sovereign, yes? :)
On Sunday, The Bridge Church had about 150 people in attendance! So awesome. Continue to pray for this church and the staff that are working so diligently in engaging their community every day!

In the evening on the first day (just felt like I was quoting Genesis), our team went with a staff member from the MNYBA on a walking tour in China Town to pray over the human trafficking going on there. It’s crazy, once you know what to look for, to realize that there are people being treated like machinery and sold all around you. We know that Houston is a hub for trafficking (both sex trade and manual labor), so seeing this in another city definitely stirs up some heartache and deep prayer on behalf of those imprisoned in both cities. I encourage you to go on a tour, whatever city you’re in, and become aware if you are not already. If the merchandise you’re purchasing is ridiculously inexpensive, there’s a likelihood that the reason is because the employees aren’t getting paid (or the people who made the product didn’t get paid). Sex trafficking is a whole other story, which I could talk about forever. If you’d like to learn more, here are some resources:

Definitely be praying for your city, and that Christ would redeem those imprisoned, whether it be to their own sin or the sins of others. We need Jesus more than we know!

On the afternoons of the second and third days, our team went to Long Island City and partnered with another new church plant, New City Church. Our group split up, and half of us did residential and spiritual surveys, while the other half did trash clean up along the streets, and the next day we switched. On the first day of surveys I ended up with the spiritual surveys, and got all kinds of different responses. We did surveys last trip too, which focused more on personal experience with spirituality. This time, the surveys were focused more on how people perceived religion in their neighborhood (more for demographic’s sake), and it was sort of surprising how many we encountered that seemed to have never even thought about religion in relation to their neighborhood before. We ended up talking to one really interesting lady who had a some intriguing beliefs about who Christ is and how we “get to God”.

The trash clean up was fun too, mostly because of our fun team. :) We wore these fabulous yellow vests which had the church’s name on the back, and ended up having some interest in the church simply because people were surprised the church would send people to pick up trash. We’re praying for New City Church and that many would come to know Christ because of their willingness to serve the community in the most practical and needed ways!

Friday night, Good Friday, I got to attend Hillsong NYC Church with part of our team, and meet up with my Jersey family! The service was so good, and such a great break from a non-stop schedule to reflect on Christ’s work on the cross.

After the service, we went to Sticky’s Finger Joint and had way too much food (some of us more than others for losing a bet). ;) So good to see the fam and enjoy great food and some good laughs, too!

The fourth day (Saturday) part of our team got to go to Astoria and help Connection Church NYC with their Easter Egg Hunt, while the rest of the group was in Brooklyn. These guys are seriously one of the best churches in NYC. They know how to do community. If you are in Astoria, I encourage you to check it out!

Sunday morning, our last day, we got to attend First Baptist Church NYC. Their pastor is an incredible preacher, and his message was one of the best Easter sermons I have ever heard. Pray for this church, as they are located right in the heart of Manhattan! Pray that they find ways to reach their community, and engage one of the busiest and largest cities in the US!

This trip was a bit of a whirlwind, and those 4 days passed so quickly, I’m still trying to catch up! But it was filled with so much joy, and I’m encouraged by what the Lord is doing in New York. Each church we worked with is so faithful in obedience, and their hearts for the people around them encourages me to love the people around me, here in Houston. I hope that you are being used by Christ to accomplish His work and love everyone you come in contact with. He is good, and He is powerful to provide the strength necessary to do great things in our world! Let’s believe that.

We’re going to Ireland! Read our letter below for details on what that’s all about!

Dear friends and family,

Ryan and I (Tiffany) have an incredible opportunity to travel to Ireland this summer for a 12-day mission trip through our church, Houston’s First Baptist Church. We are so excited about this trip, as it will be our first mission trip together as a married couple. We each have been on mission-focused trips individually, and Ryan was actually able to go to Ireland a few years ago through our church with a very small team to explore how our church can assist churches in Ireland. Since then, there have been a few trips back, and we are honored to be able to join the team in July!

We’ll be leaving on July 19 and returning July 30. While there, we’ll be hosting some fitness-centered outreaches, doing a lot of praying for the community, and assisting the pastor in Sligo with whatever he needs. As you may know, fitness is one of both Ryan’s and my greatest passions! I have the privilege of teaching fitness classes at our Fitness Center in our very church, and absolutely love inspiring others toward not only health, but also building up our bodies in godliness in order to serve Christ effectively. On this trip, we’ll be able to use the passions that make us come alive to spread the gospel and bring hope to people across the world.

We are asking that you partner with us as we move forward in faith, and commit to praying for us and our team in both our preparation of the trip, and our time in Ireland. We know that it is only by God’s grace that we know Him and that He calls us His own. Our desire is that many would come to know this same grace, and that the Lord would use us to draw people to Him. Would you join us in this prayer and plea for Ireland to know the one true God? Pray that we would be obedient to His work, and faithful servants as we follow Him. Pray also for the pastors in Ireland, that they would be strengthened and encouraged today and in the months to come. And pray that God would already begin to soften hearts and prepare the way for conversations that will take place while we are there.

We don’t know the exact costs right now because a lot of it depends on airfare, but we have been told that this trip will cost around $3000 per person ($6000 total for Ryan and myself). This weekend, Ryan took me on a date… or rather, a day full of adventures. I drew a popsicle stick at the beginning of this month from the Jar O’ Dates he gave me for Christmas, and the clue was, “AROO! AROO! AROO!” And anyone who knows Sparta knows that clue can only mean one thing. Ps. Most of these photos were taken with my phone, so sorry if some pics are blurry!

Here lie the tales of the adventures of our day (I do love that we can relish in this geeky interest together).

During my morning time with God, I found the first message of the day in my devo:

After breakfast, we geared up with snacks and drove to Memorial Park. There, I received my “Spartan Training”. Aka throwing a spear at a watermelon in an open field with bluebonnets nearby.

We put the spear back in the car, and started running. I did not know where we were running to, but we ran. We ended up at the Edwards Theater about 2.5 miles away from the running track. And guess what movie we saw???

You are correct, sir! We saw 300: Rise of an Empire! And yes, I did eat a Snickers Ice Cream Bar at 10:45a.
Apparently, Ryan’s first idea was to run to a movie theater on Weslayan St, which was 5 miles each way (explaining Wes Lands). I’m glad he remembered there was another movie theater half the distance away from us.

This right here is one of the many perks of seeing a movie at 11a. This and the ticket prices. Here I am in an empty movie theater with my ice cream in my right hand. Bliss.
The movie was great as expected, other than a really weird and kind of confusing sex scene. That with the violence, don’t take your kids to this movie, people.

After the movie, we ran back to the park, and were accompanied by these beauties:

We purposefully relaxed for the afternoon, since we are so busy all the time and sometimes feel like our weekends wear us out more than help us to recharge!

We got ready for dinner, and Ryan brought me to a place we’d never been to before but have wanted to try for a while. We absolutely LOVED it! The ambiance is in my opinion, to die for. Hearsay is a historic building built in 1889, renovated into an industrial restaurant with classy style. The chandelier in the middle of the dining area pulls in a romantic feel, and the decor is simplistic and clean. The food was sooooo good! Definitely will be back to this place in the near future. Oh! And sit in the balcony if you can.

And for all of you waiting for what comes next, because you know how much I love dessert (and might love it even more when I’m not able to have it for 3 weeks)…… We bring you Fat Cat Creamery. This was AMAZING. It’s an ice cream shop in the heights that uses mostly local ingredients, namely the cream, eggs, and milk. The texture was different than typical ice creams, and it wasn’t overly sweet, but sooo creamy! And the waffle cone is by far the best cone I have ever had. I had the hardcore chocolate and peanut butter, and Ryan had the milk chocolate stout. Guys, go check this place out. Some of the BEST ice cream I have ever tasted. And you know me and ice cream.

We were thoroughly stuffed after the last trip, and called it a night. This date was full of new things, and they all turned out to be some new favs of mine! Love when that happens.

Go find someplace new, and give it a try! Make an adventure out of your hobbies, even if they’re a little geeky! We had a blast, and I’m already looking forward to next month’s popsicle stick. :)

rodeo | cheat day

Ryan and I had a fantastic time at the rodeo yesterday. This was our cheat day, and though it will look like we did not hold back when you see these pictures, believe me… we did. Next year we decided we need to go more than once so we can try all the crazy stuff without stuffing our faces in one day (fried Nutella and chocolate dipped bacon is already on next year’s list).

My sister texted me and asked how we feel after eating all that junk. Are we sick? The answer is: nope. Hahaha. We feel completely fine, and other than crashing from a sugar high a few hours later and feeling really fat, we don’t feel bad at all. Kinda strange, I do admit. Not complaining though.

This one was really good (obviously… look at my face), but I can’t lie to you, this was not the best one of the day. It won an award on a rodeo food list, so we tried it. They had a banana sundae with rum sauce that I think would have been better. Next time. :)

Ryan wanted to try this pizza that won an award for strangest food… apparently it’s topped with scorpions, grasshoppers or meal worms. So nasty. We decided against the pizza, as the amount of desserts we wanted to try won over (thank God).

This Wednesday (3/5) marks the beginning of Lent. I always look forward to this season, as in recent years I have cherished Lent more closely than years past. For me, it’s not just the taking away of something I hold dear to me, it’s more about the intentional time spent meditating on Christ and His work on this earth. Just like any relationship, the more I invest, the better I know Him, and the greater my love grows for Him. After 40 days of focusing my attention on Christ’s life as a man, I’m moved so much more deeply when the anniversary of His death draws closer. This is only followed by joy almost too great to contain when we get to celebrate His defeat of death on Easter Sunday. This is truly the greatest, most redeeming moment for those who put their trust in our Lord.

Ryan asked me tonight to be reflecting on things in my life, whether tangible or not, that are hindering my love for Christ and spending quality time with Him. It’s already easy for me to pinpoint some things, but we are taking the next few days to really pray about this season of Lent, and work through putting those things aside for a time in order to admire who Jesus is more deeply.

We’re also reading through this book (started today) and will finish right around Easter. If you don’t have a Lent read, I encourage you to pick this one up. Each day is only about 2 pages long, and helps to reflect on Christ’s purpose and design in His death.

I’ll leave you with the same question the hubs asked me. What in your life, tangible or not, is hindering your love for Christ? What takes the place of quality time spent with Him? Where do you go to, or what do you do to distract, get away, cope, or ignore stuff you don’t like? My challenge to you is to trust Christ with those things, and give them to Him this Lent season. Force yourself to rely on Him, and ask Him to be enough for you. Ask Him to speak to you clearly, and that you’d be receptive to what He has to say. I’m excited to see where He brings us on this journey with Him.

It’s starting to warm up here in Houston. Anyone who’s lived in Houston for a good amount of time knows that the end of February/early March usually means “experience all four seasons in one week” time of year. Not exaggerating, we’ve had low 40’s-mid 80’s in the past 7 days. This morning was beautiful, and the hubs and I went on a short run to get out in it. Well, I am sad to see the cooler weather go, but I’m excited about the Spring, and I hung my Spring wreath yesterday in honor of the mid-70’s. :) This wreath was incredibly easy, so there’s a possibility that I might also make an “Easter” wreath when that time comes around. We shall see.

This wreath I made using an embroidery hoop for the base. It actually worked out well because the hoop I used had a pretty thick wooden side where the “collar” is. I hot glued the thick ends of the greenery I used onto that wooden collar, which just gave it a more secure hold.

I used twine to hang it, so I started out by hot gluing the twine to the hoop, wrapping it several times. The very last time I made a little knot through the top piece so that the end would be secure and in the middle of the hoop’s width.

Next, I simply hot glued the main stem of the greenery onto the hoop. I didn’t glue any of the other stems branching off of the main one because I wanted it to be loose and flowy. It’s not very heavy, so I’m not too worried about the hold.

As I said before, I glued the thick parts of the “branches” onto the collar of the hoop, ensuring extra hold.

Now, for the flowers, since I made them on floral wire (using this tutorial), I simply wrapped the wire around the hoop, no hot glue involved. I did this on purpose because I might want to use these flowers again for another project. Easy to put on, and easy to take back off.

That’s it! This wreath is so easy and customizable. Since the flowers are not permanent, I might even add more colors or different kinds of flowers. Who knows… it mostly depends on how busy the next few weekends are. :)

This weekend, my hubs and I set out to a campsite for a mini getaway. There are few things I enjoy more than being outdoors with the smell of a campfire, and a cup of coffee in one hand and book in the other. And that’s a lot of what my weekend consisted of (thank you, Jesus). The weather was absolutely gorgeous. We got pretty chilly at night time (literally, I brought 8 blankets and we used all of them), but during the day it was so perfect. Here are a few pics for you to enjoy. The week before our trip, we discovered that our friends, KJ and Elise were also camping this weekend at the same campsite! So, they invited us over for dinner and we brought dessert. So fun. Their view was also incredible… right next to the lake!

Ok, so this is the story of my life. Like I said, we decided to bring dessert over on Saturday night since KJ and Elise were making dinner for us. I found this brilliant idea on Pinterest for these campfire chocolate cakes baked in orange peels. Well, I clearly filled them up with way too much cake batter, and we enjoyed a 20 min show of the mini cakes exploding with oozing chocolate, like a volcano. That top one in the picture was shooting straight out, horizontally. They did turn out delicious, but looked horrible, and we ended up eating them right out of the campfire because they were too hot to pick up. But we had some great entertainment, and I haven’t laughed that hard in forever. You could probably find this under a Pinterest Fails blog somewhere. Keep an eye out.

This weekend my parents also came into Houston to volunteer at Passion 2014. They stayed at our place while we went camping, so we didn’t see them much over the time of their visit. We met up with them for lunch on their way out yesterday, which was a fun time of sharing stories from both our weekends. Aren’t they the cutest?

I’ve been reading through C.S. Lewis’ “The Problem of Pain.” And it has been blowing my mind. I don’t know why I have not ready this up until now, but I’m glad I am. By the time I’m done I’ll probably have actually read it 3 times through, as I’ve been taking it slowly and rereading almost every paragraph multiple times. Packed with so much good. One thing that has really stuck with me a few chapters back is this. Sorry it’s a bit long, but it is worth the read:

“We were made not primarily that we may love God (though we were made for that too) but that God may love us, that we may become objects in which the Divine love may rest ‘well pleased’. To ask that God’s love should be content with us as we are is to ask that God should cease be God: because He is what He is, His love must, in the nature of things, be impeded and repelled by certain stains in our present character, and because He already loves us He must labour to make us lovable.

My prayer for myself and for you is that we know God’s love as it really is, and that we do not fight Him or label Him as cruel in His making us lovable. It is good, and we are better for it. So thankful.
